The eggs are gray-black with a fine grain, small and have the strongest flavour of all sturgeon eggs. Among connoisseurs they are the most highly appreciated for their unique taste. Sevruga caviar is also the least expensive, mainly because Sevruga sturgeon are to be found in greater numbers. |

Sterlet sturgeon ( Acipenser ruthenus) is one of the smaller species of sturgeon and is now very rare.
Sterlet Sturgeon produces Caviar rather similar to Sevruga in look and flavor. The small golden eggs of the STERLET STURGEON were once commonly ranked, along with Beluga, as the most desired caviar in the world. It is grain to grain and malossol (less salted). It is slightly pasteurized.
